The nature of gardenia yellow


Orange crystalline powder, slightly odorous. It is soluble in water and immediately dissolves into transparent yellow liquid. Soluble in ethanol and propylene glycol, insoluble in oil, pH value has little effect on color. Its hue is more stable than β - carotene in acid (Bitter Melon Extract) and alkaline (Barley Grass Powder), especially in alkaline medium yellow, with the maximum absorbance near 440nm. Under neutral or alkaline conditions, Ginkgo Biloba Extract has better light resistance and heat resistance, but at low pH value, it has poor heat resistance and light resistance and is prone to browning. It has good dyeing effect on protein and starch, that is, it has good coloring power on hydrophilic food, but it is not stable in aqueous solution. The discoloration is more obvious in acid than in alkaline. It is quite stable for metal ions (such as Capsicum Oleoresin, calcium, lead, copper, tin, etc.), and iron ions tend to make gardenia yellow and black.
